Sweet&Sour pork Chops

I do love this one !!! I originally got it from a WW cookbook years ago/ tweekd it a bit:)

I usually serve it with Quinoa or rice!!

Ingredients: 

3 pork chops/5 depending size?(in casserole dish)
Sprinkled with thyme,garlic powder
1/2 cup celery (sliced)
1 green pepper(chopped app 1/2-1 inch)
1 cup onions (chopped big)
2 cups chopped pineapple ( no sugar added)
1/4 cup apple cider vinegar
1/4 tsp salt
1 tbsp soya sauce
2/3 cup pineapple juice
1 tbsp & 2 tsp cornstarch


  1. Preheat oven to 350*
  2. Saute green peppers,onions,celery lightly
  3. When oven temp is ready ,place pork chops in a casserole dish and cook for app 10-15 minutes(Throughout this recipe the timeings for the pork chops vary depending on size/amount of chops you are cooking/thickness?)
  4. In a bowl, combine liquids together,pineapple juice,vinegar,soy sauce,salt,cornstarch stirring to dissolve cornstarch.
  5. Remove casserole dish from oven,add sauteed vegetables with chopped pineapple,( on and around pork chops) and liquid mixure all over everything.
  6. Put back in oven and cook for approximately 15-20 minutes!
