I added mushrooms to the onions and garlic, because I had some leftover, and my veg was actually a combo of broccoli and cauliflower, since I didn't have enough of either to make this dish. This one's a definite keeper, and next time, I'll try it on its own - with the egg on top - as the recipe suggests.
1 tablespoon olive oil
1/4 yellow onion, minced
2 green onions, minced
2 garlic cloves, minced
2 cups broccoli rice or cauliflower rice
Juice from 1 lime
Pinch of cayenne pepper
2 tablespoons minced cilantro
2 large eggs, to serve
