Thai Chicken Fettuccine

Ingredients: 

1 c. salsa
1/4 c. creamy peanut butter
2 T orange juice
2 T honey
1 t soy sauce
8 oz. cooked fettucine
3/4 lb. chicken breasts, cut into strips
1 T vegetable oil
1 red pepper, julienned
1/4 c. minced fresh cilantro


For sauce, combine first five ingredients. Cover and microwave for 1 minute. Stir and set aside.

Cook fettuccine according to package directions. Meanwhile, cook chicken in oil over medium heat till browned (in two batches if necessary).

Add red pepper, cook and stir till crisp-tender

Drain fettuccine. Top with chicken mixture and sauce (heat sauce again in microwave if necessary). Sprinkle with cilantro
