Thai Ginger & Sweet Red Chili Shrimp

Ingredients: 

2 pounds large shrimp, peeled and de-veined
2 tablespoons dry sherry
¼ teaspoon salt
4 tablespoons peanut oil
1 ½ tablespoons fresh ginger, finely grated
3 cloves garlic, minced
2 tablespoons Thai Sweet Red Chili Sauce
1 tablespoon jalepeno pepper, seeded and finely chopped
½ cup water
1 teaspoon soy sauce
4 scallions (green parts only), thinly sliced
2 tablespoons red bell pepper, finely chopped
¼ teaspoon dark sesame oil
