Thai Peanut Noodles with Chicken and Veggies


1 lb. whole wheat spaghetti (or soba noodles)
2 chicken breasts, cut into thin strips
1 pkg shredded broccoli
1 large bundle asparagus, cut into 1 inch pieces
3/4 cup smooth peanut butter
1/2 cup unseasoned rice vinegar
3 tablespoons sugar
5 tablespoons soy sauce
1/4 cup water
1 tablespoon toasted sesame oil (plus extra for sauteeing chicken and veggies)
1-2 teaspoons crushed red pepper (depending on taste)
1 large garlic clove, minced
3-4 green onions, chopped
Lime wedges, for serving
Sesame seeds for sprinkling
