Thai Tropical Fruit and Tofu Salad

Ingredients: 

1/2 lb firm tofu, drained and pressed
2 tsp fresh lime juice
1 tbsp tamari or soy sauce

1/8 cup fresh lime juice
1/8 tsp salt
2 tsp agave nectar (or your choice of sweetener)
1 tsp toasted sesame oil
1 tsp tamari or soy sauce
1/4 tsp Aleppo chili flakes
1 tsp sesame seeds
2 tbsp cilantro, finely chopped

1/2 cup shallots (or onion), finely chopped
1 tbsp vegetable oil
1/4 tsp salt

2 cups pineapple, cored and chopped
1 kiwi, peeled and chopped
1 mango, peeled and chopped (see here how to cut a mango)
1 red bell pepper, diced
4 cups baby spinach

2 tsp unsweetened dried coconut
2 tbsp cashews or peanuts, crushed
