Three Bean Salad

Ingredients: 

1 can blackeyed peas
1 can chickpeas
1 can red kidney beans
1 medium cucumber, chopped
1 red bell pepper or tomato, chopped
finely chopped cilantro

Dressing 3 tablespoons red wine vinegar
2 packets Goya Salad and Vegetable Seasoning
1 tablespoon lemon juice
1/2 cup extra virgin olive oil


In a serving bowl, mix together all beans, cucumber, tomatoe or pepper, and cilantro

In a small bowl, whisk together vinegar, salad and vegetable seasoning, and lemon juice.  Slowly drizzle with olive oil whisking constantly, until blended.  Pour dressing over bean mixture.  Toss well to coat completely.
