2 cups water
1 cup rice
1 tbsp canola oil
1 tsp minced garlic
1/2 tsp crushed red pepper
1 lb firm tofu
4 lime wedges
Optional:
bean sprouts
green onions
chopped cilantro
jalepenos
Combine chicken broth and water in large saucepan and boil
Stir in rice and boil
Remove from heat and let stand 5 min
Heat oil in non-stick skillet over med heat
Add garlic, red pepper, tofu (and optional veggies) - sauté 3 min or until tofu is done
Stir tofu mix into broth mix
