Tuna or Salmon Patties

Notes: 

These are so easy and flexible. A great way to use leftover mashed potatoes. I've also made these with corn or creamed corn and green onions. I bet they'd work with mashed or shredded carrot, peas, or spinach.

Ingredients: 

1 large potato, peeled and cubed
2 (185g) cans tuna, drained
1 egg
1/2 small onion, chopped
1 tablespoon Dijon mustard
1 tablespoon of breadcrumbs (or as needed)
1 teaspoon garlic powder
1 teaspoon Italian herbs
1/4 teaspoon cayenne pepper
salt and pepper to taste
2 tablespoons olive oil
