Twice Baked Potatoes

Ingredients: 

6 baked potatoes
1 (8oz) carton sour cream
1 (4oz) pkg shredded cheddar cheese
1 green onion, chopped
1 tbsp parsley
1 tsp salt
2 tbsp butter, melted
1/4 c. milk
melted butter


  1. Scrub potatoes, rub with shortneing for softer skins (optional).  Prick with fork.  Bake at 400 for 50-60 min.  Cool 10 min.
  2. Cut thin slice off top of potato, carefully scoop out pulp, leaving shell intact.
  3. In large bowl, mash potato pulp to remove all lumps. 
  4. Beat in sour cream, cheese, onion, parsley, salt, butter and milk until smoth and fluffy.
  5. Spoon into potato shells.  Brush with melted butter. 
  6. Bake an additional 15-20 min until potato is heated through.
