Vegan Banana Pudding, Southern Style, with Coconut Milk

Ingredients: 

1 can full fat coconut milk
1 1/3 cup unsweetened almond milk or other non-dairy milk
1/2 cup sugar
1/4 cup cornstarch
1/8 tsp salt
2 tsp vanilla extract
1/4 tsp rum extract (optional)
4 ripe bananas cut into slices
8 oz vegan vanilla wafers
1 recipe coconut cream
Additional banana slices and vanilla wafers for garnishing (optional)
