Vegan Chorizo Breakfast Tacos with Cauliflower

For the Cauliflower Chorizo
12 oz of Riced Cauliflower
1/2 C packed sun-dried tomatoes (in oil)
1 T paprika
1 1/2 tsp garlic powder
1/2 tsp + 1/8 tsp sea salt or to taste
1 tsp ground coriander
1 tsp dried oregano
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp dried thyme
1/4 tsp cayenne pepper
1/8 tsp ground cinnamon
1 T olive oil

For the Hemp Seed Sour Cream
1/2 C hemp hearts
1/3 C water
2-3 tsp apple cider vinegar or to taste
1 1/2 tsp fresh lime juice
1/4 tsp sea salt

To Assemble
8 tortillas
1/2 white onion, finely diced
1/2 avocado, cubed or sliced
1/3 C cilantro leaves
1 lime, sliced into wedges
