Vegan White Chocolate Macadamia Nut Cookies


makes about 2 dozen


sugar blend:
1/2 cup maple syrup (I used grade B)
1/2 cup vegan sugar
2 sticks of Earth Balance Buttery Spread Sticks (vegan butter)
1/2 tsp vanilla or almond extract
1 tsp apple cider vinegar
1 medium banana

1 1/2 cups whole wheat pastry flour (I used Bob's Red Mill)
2 Tbsp vital wheat gluten flour
1/2 tsp cinnamon
1/2 tsp ginger powder
1 tsp baking soda

Fold in:
1/2 cup vegan white chocolate chips
1/2 cup raw chopped macadamia nuts
