Vegetable Beef Soup

1 lb stew meat
2 Tbs olive oil
Half a yellow onion, diced
3 cloves garlic, minced
3 regular size potatoes (or 8 small reds or yellows) quartered
2 large carrots cut into 1inch slices
handful of fresh green beans, snapped into 1 - 2 inch pcs
1 can corn, drained
1 14.5oz can diced tomatoes
32 oz beef broth
2 teaspoons tomato paste (optional)
2 Tbs Worcestershire sauce
2 bay leaves
spices - cumin, marjoram, chili powder, onion powder

  1. Brown the meat in the olive oil.
  2. Place the carrots, onions, garlic, potatoes, and corn into the slow cooker.
  3. Add meat.
  4. Pour broth, and tomatoes over everything.
  5. Add tomato paste and worcestershire sauce
  6. Add bay leaves
  7. Season with salt, pepper and spices to taste
  8. Hold green beans aside, add them 10 mins before serving.
  9. Cook on low for 7-8 hours, or on high for 4-5 hours
  10. Discard bay leaves
