Vegetable Chili

Notes: 

Serves 4

Ingredients: 

2 onions, chopped
1 garlic clove, crushed
3 celery ribs, chopped
1 green bell pepper, diced
8 oz mushrooms, sliced
2 zucchini, sliced
14 oz can kidney beans
14 oz can chopped tomatoes
2/3 c tomato sauce
2 TB tomato paste
1 tsp each chili powder, ground cumin, ground coriander
Salt and pepper


  1. Put onions, garlic, celery, pepper, mushrooms, zucchini in large saucepan
  2. Add kidney beans, chopped tomoatoes and other forms of tomato
  3. Add seasoning
  4. Cover, bring to boil and simmer 20-30 minutes
