3 1/2 cups white whole wheat flour
1/3 cup vital wheat gluten
4 teaspoons instant/quick-rise yeast

2 1/2 cups very warm water (120°F to 130°F)

1 tablespoon salt
1/3 cup coconut oil (melted and cooled) OR vegetable oil
1/3 cup honey
4 teaspoons lemon juice

2 1/2 cups white whole wheat flour
