Waffle Maker Mexican Cornbread

Notes: 

This recipe trades the traditional cast iron pan for a waffle maker. The waffle marker gives it a crisper texture. For the grating a food processor is slightly faster, but a hand grater not too bad either.

Ingredients: 

2 cups self-rising cornmeal mix
½ tsp salt
12 oz finely shredded cheese, Cheddar & Oaxaca (or Monterey Jack)
1 cup sour cream
1 cup frozen whole kern corn
3 jalapenos, grated - seeds left in (for less spiciness remove seeds or add fewer peppers)
2 eggs, well beaten
2 Tbs vegetable oil


  1. Turn on waffle maker to high setting.
  2. Add dry ingredients (cornmeal mix and salt) to a medium-sized bowl, and mix.  Add the rest of the ingredients.  Stir mixture until combined.
  3. When the waffle maker is ready, put a heaping 1 cup of the batter onto the iron and close.   Repeat until all the cornbread has been made.
