White Bean and Kale Soup

Ingredients: 

1 lb dried white beans (such as Cannellini or Great Northern), rinsed and picked over
1/4 c extra-virgin olive oil
1 large yellow onion, chopped
2 celery stalks, chopped
1 large carrot, peeled and chopped
5 garlic cloves, minced
Salt & black pepper
6 c vegetable stock
1 can diced tomatoes (14 1/2 oz)
1 2x1x1/4 in Parmesan rind, cut into bite-sized pieces, if desired
3 fresh thyme sprigs
1 bay leaf
1 1/2 lbs kale
1/4 Tbls soy sauce
1/4 c roughly chopped basil leaves
Grated Parmesan cheese for garnish (optional)
