1. Preheat oven to 425
2. In a bowl or measuring cup, make a paste of Thyme, Salt, Pepper, and Olive oil.
3. Rub paste under the skin of the chicken, and on top of the chicken.
4. Remove anything left by the butcher in the chicken. Stuff with onion and lemon.
5. Place chicken in the oven for 15 minutes. Reduce heat to 375 and cook for about 10-15 minutes per pound.
