This works well as snack or a starter and you can do different variations for the filling. Squashes, pumpkins and gourds belong to the same family as cucumbers, melons, marrows and courgettes. There is an amazing variety of sizes, shapes and colours, and although most are edible, some are used for decoration only. All squashes and pumpkins have a tough outer rind, an inner cavity filled with hard seeds and sweet, rich, well-coloured flesh with a dense, nutty and earthy flavour.
4 gem squash
1 tsp dried oregano
1 level tsp coriander seeds
1 – 2 dried red chillies, chopped, to taste
a pinch of ground cinnamon
8 sun-dried tomatoes in oil
sea salt and freshly ground black pepper
a large handful of rocket, washed and spun dry
extra virgin olive oil
½ a lemon
250 g tasty crumbly goat’s cheese or feta cheese
