Whole-Wheat Banana Bread

Ingredients: 

• ½ cup butter
• ¾ cup brown sugar
• 1 egg
• ½ cup white flour
• 1 cup unsifted whole wheat flour
• 1 tsp baking soda
• ¾ tsp salt
• 2 ripe bananas
• ¼ cup buttermilk or yogurt


Directions

  1. Preheat oven to 350° F.
  2. Grease either one 9”x5” loaf pan or three small loaf pans.
  3. Using an electric mixer, combine in a large bowl the butter, brown sugar, and egg. Beat until light and creamy.
  4. In a separate bowl medium-sized bowl, stir together white flour, whole wheat flour, baking soda, and salt.
  5. In a third bowl, mash bananas. Stir in buttermilk or yogurt and blend just enough to mix.
  6. Alternating little by little, combine dry ingredients and banana mixture to butter mixture. Stir just enough to combine well.
  7. Pour into greased loaf pan(s).
  8. Bake in preheated oven for 50-60 minutes (9”x5” loaf) or 35-45 minutes (small loaves).
  9. Cool in pan for 10 minutes. Remove from pan and finish cooling on a rack.
