Whole Wheat Oatmeal Applesauce Banana Bread {healthy + vegan-friendly}

Notes: 

I made this with gluten free flour. Was really moist and delicious. However, the cooking time was only about 45 minutes instead of 60.

Ingredients: 

Cooking spray
1 heaping cup mashed banana
1/3 cup honey
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 egg
3/4 cup unsweetened vanilla almond milk (or skim, coconut, etc.)
1 1/2 cups whole wheat pastry flour
1 cup rolled oats
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
