½ cup neutral-flavored oil (canola, peanut or regular olive--not extra virgin)

1 cup sugar

1 egg

1 teaspoon pure vanilla extract

1½ cups all-purpose flour

½ teaspoon cinnamon

1 teaspoon baking powder

Pinch of salt

1⅓ cups grated zucchini

Turbinado sugar, for garnish
