Zula's Potato Candy

Ingredients: 

1 large baking potato
1 teaspoon vanilla extract
1/2 teaspoon salt (omit of using salted butter)
1 tablespoon unsalted butter
3 lbs confectionery sugar
1 cup smooth peanut butter


  1. Boil then peel potato.
  2. Mash in a bowl with salt and butter. Let cool.
  3. Slowly add powdered sugar and continue to mix until you get a stiff dough consistency.
  4. Lay out a large piece of wax paper.
  5. Using powder sugar sprinkled on your wax paper begin to roll out the dough into a rectangle to a thickness of about 1/4". Think cinamon rolls!
  6. Once the dough is spread out cover the top with a thin layer of peanut butter. Then again thinking of cinamon rolls roll the dough up into a long log , using the wax paper to help lift the dough.
  7. Cut the log in half and cover then place into  the refrigerator for at least an our to chill.
  8. Remove from the refigerator and cut into 1/2 round.
