makes 24 small tartlets
You could cheat and use frozen sweet shortcrust pastry, but home made pastry is better. For the nuts, use a mixture of raw almonds, walnuts, macadamias, pecans or hazelnuts. I store these tarts in the frig to keep them fresh - but they do disappear quickly!

Ingredients: 

Rich home-made sweet pastry (or 2-3 sheets frozen sweet shortcrust pastry) to line 24 x 6 cm shallow patty tins.

Filling
100 g unsalted butter, chopped
1/3 cup caster sugar
2 tablespoons cream
few drops vanilla extract
2 teaspoons plain flour
125 g mixed unsalted nuts, chopped eg. Almonds, walnuts, macadamias, pecans
