Ingredients: 

Chicken
8 skinless chicken thighs, trimmed of all visible fat
1/4 teaspoon ground black pepper
1 tablespoon vegetable oil
2 large leeks (white part only), chopped
2 ribs celery, chopped
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/4 cup unbleached or all-purpose flour
6 cups 1% milk
1 teaspoon lemon juice

Dumplings
1 2/3 cups reduced-fat baking mix
2/3 cup 1% milk
1/4 cup hopped fresh parsley
