Grilled Chicken Shawarma with Golden Butter Fries and Garlic Sauce.

Notes: 

Delicious!!!! I ended up accidentally making 3 lbs of chicken instead of 2, and it was perfect for 4 of us. I also forgot to make the naan, but we didn't need it with the fries. Next time, make more shallots. We used dill and mint, as suggested.

For the fries in the oven: use the tips from https://www.spendwithpennies.com/crispy-oven-fries/
- Soak the potatoes in cold water after cutting for at least 30 minutes. This step removes a lot of starch (you will see it in the bowl after you remove them) resulting in a crispier French fry!
- Make sure you dry them well so they don’t steam and get soft when they bake! I spin them in my salad spinner and then dap in a kitchen towel.
- preheat the baking trays for a few minutes in the oven so they are hot when the fries are laid out on them in a single layer (not over-crowded).
- Use parchment paper to keep them from sticking and oil to make them crisp! While these are a version of healthy fries, if you want them to crisp, you will still need to be generous with the oil.
- bake at 375°F for 20 mins (25 for thicker fries than 1/4") to cook and then turn up the heat to 425 for another 15 mins to really crisp them up. Take them out, and for 4 potatoes, brush 2 tbsp melted butter over the fries and toss them, then put them back in for another 5 minutes.
- When taking the fries out, drain them over paper towels so the butter and oil doesn't make the fries soggy. Do not cover the fries.
- Sprinkle fries with salt.

Ingredients: 

2 pounds boneless skinless chicken breasts or thighs, cut into bite size chunks
1/4 cup plus 3 tablespoons extra virgin olive oil
1 tablespoon smoked paprika
2 teaspoons ground cumin
1/2 teaspoon ground turmeric
6 cloves garlic, grated
juice and zest of 1 lemon
1/2 teaspoon crushed red pepper flakes
kosher salt and black pepper
4 shallots, halved
1 cup plain Greek yogurt or avocado mayo
1/2 cup mixed herbs, such as mint and dill, chopped
Golden Fries
4 russet potatoes, cut into ¼-inch-thick matchsticks
3 tablespoons extra virgin olive oil
1 teaspoon ground turmeric
1/4-1/2 teaspoon cayenne pepper
4 cloves garlic, skin on and smashed
kosher salt
2 tablespoons salted butter
