Raspberry Coconut Muffins

Ingredients: 

Makes 6 muffins

• 3 eggs (room temperature)
• 1/4 cup melted butter
• 1/4 cup sugar substitute
• 1/3 cup coconut flour
• 1/2 cup raspberries
• 1/2 tsp baking powder
• 1/2 tsp vanilla
• 2 punches if salt
• 2-5 tablespoon water (depends on the consistence of the dough)


Preheat the oven to 190°C (374°F). Whisk the eggs with a mixer. Add the melted butter, vanilla, salt and the sugar substitute to the eggs. Then add the coconut flour and baking powder. Mix the dough until a smooth paste is obtained. As the flour absorbs the liquid in the dough , you should now add depending on the consistence of the dough a little water. The dough should not be too thin, but also not be too thick.
Add the berries into the dough and lift them under the dough. Spread the mixture into the muffin forms and bake the muffins about 15 to 20 minutes till a gold - brown colors muffin.
