Raw Vegan Swiss Roll

Notes: 

Here’s a delicious raw vegan Swiss roll recipe. This roll is really easy to make and requires no cooking.

Ingredients: 

For the dark layer
½ cup of nuts/seeds of your choice

½ cup of oat flour or ground oats

3-4 tablespoons of cocoa powder

3 tablespoons of coconut oil (or ½ cup of dried fruit of your choice)

2 tablespoons of maple syrup

For the white layer
½ cup of shredded coconut

1/3 cup of oat flour

2 tablespoons of coconut oil

2 tablespoons of maple syrup


For the white layer:

In case you are using rolled oats, grind them first. Add the shredded coconut, the coconut oil and the maple syrup and process until everything is mixed well.

Take the mixture out and start preparing the dark layer mixture.

For the dark layer:

Add the oat flour and the nuts into the food processor and grind them. Add the rest of the ingredients and process until everything is well combined. If the mixture is too dry, add some more coconut oil.

Cover your working space with baking paper and spread the dark mixture forming a rectangular shape. Working with wet hands helps a lot. Spread the white layer over the dark layer and roll them together using the baking paper. Put the roll into the freezer for a few hours until it hardens and you can cut it into slices.

You can keep it in the fridge after that.
