2 teaspoons olive oil
3 medium carrots, sliced
1 leek, sliced (white and light green portions only)
2 medium zucchini squash, cut into bite sized pieces
3 cloves garlic
4 cups fresh spinach leaves
4 cups chicken stock
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon Mrs. Dash table blend
Salt and pepper to taste
Meatballs *:
1-1/4 pounds lean ground turkey
1 tablespoon dried oregano
2 teaspoons dried thyme
2 teaspoons garlic powder
Salt and pepper to taste

I varied this quite a bit by using Italian seasoning, garlic & hot peppers in ground chicken to make simple meatballs. The soup, I used onion, carrot, cabbage, pepper, fresh tomato, spinach, lemon juice, vegetable broth. It was quite good.
