Citrus Sunshine Salsa

Ingredients: 

1 red bell pepper, diced
1 pineapple, diced
4 kiwis, skins removed and diced
1 fennel bulb, sliced in half, core removed and diced
2 star fruits, sliced thinly
1 lime (for the juice)
3 Tbsp extra-virgin olive oil
1/4 cup cilantro, chopped
1 pinch coarse salt and freshly ground pepper


  1. Once all of your fruits and veggies are diced, combine them in a large bowl.
  2. For the dressing, squeeze the lime juice into a smaller bowl. Add the chopped cilantro and a good pinch of salt and pepper. Whisk the oil in, creating the dressing.
  3. Toss the salsa with the dressing and serve in mini cups with crackers, or even on top of grilled fish or chicken.
