Grasshopper Mini-Cheesecakes

Notes: 

My boyfriend says these are delicious, but I don't like peppermint or cheesecake, so I can't confirm that.

Ingredients: 

1 8 oz package of cream cheese
1 cup sugar
1 egg
3 drops green food coloring
1/2 tsp peppermint extract
9 Grasshopper of Thin Mint cookies, crushed
6 cupcake liners


  1. Press the crushed cookies into the bottom of each of the 6 cupcake liners. If any cookie is left over, sprinkle it on the top of the finished cheesecakes.
  2. Beat the softened cream cheese with the sugar, then mix in the egg, food coloring, and peppermint.
  3. Pour the cheesecake mixture into each of the cupcake liners.
  4. Bake at 325 degrees F for 45-55 minutes, or until the middle of the cheesecakes is almost set.
  5. Cool for 30 minutes to an hour, then refrigerate for at least 3 hours.
