Shredded Sweetfish on Chilled Chawan Mushi with Uni

Editors note: The Ayu or Sweetfish is a native of Japan and has a naturally sweet flavor. Chawanmushi translates to English as "steamed in a tea bowl", referring to the method of prepartation.  Photo credit: Matthew Klein.

Speical Equipment Required: Deep frier

Ingredients

  • 2 sweetfish, filleted and shredded, skin reserved
  • 1 cup dashi
  • 1 egg
  • 2 pc. West coast uni
  • Pinch of green scallion julienne
  • Soy sauce, to taste
  • Mirin, to taste
  • Salt, to taste

Directions

  1. Mix the dashi and egg together and season to taste with the soy, mirin and salt.
  2. Place in 4 oz. cups
