2 onions, chopped
4 cloves garlic, minced
1 can (28oz/796mL) stewed tomatoes
3 cups vegetable stock or chicken stock
1/4 cup tomato paste
1/4 tsp pepper
In a saucepan, heat oil over medium heat.
Cook onions and garlic, stirring for 5 minutes or until softened.
Add tomatoes, stock, tomato paste and pepper, and bring to boil.
Reduce heat and simmer for 15 minutes or until slightly thickened.
When done, blend until completely fluid (unless you enjoy chunks).
