Peppery Chicken with Pears

Ingredients: 

4 skinless chicken breasts (about 1 pound)
3 t cracked black pepper
1 t dried rosemary, crumbled
1/4 t crushed red pepper
2 medium pears (1 pound)
1 medium onion, cut into 8 wedges
2 T honey
2 T white wine (or red wine) vinegar
Pecans, chopped and toasted


  1. Peel and core pears; cut lengthwise in half, then cut crosswise into thin slices.
  2. Spray 9x9 pan with cooking spray. Season both sides of chicken and press in gently; place in pan and bake uncovered for 25 min (until chicken is no longer pink).
  3. While chicken is bakig, spray skillet with non-stick spray. Cook pears and onion over medium heat for about 3 min (until pears are almost tender).
  4. Stir in honey and vinegar; reduce heat to low. Cover and simmer 2 minutes longer.
  5. Serve pear mixture over chicken, and sprinkle with pecans.
