Cranberry Bran Muffins

Notes: 

Yield-12 muffins

Ingredients: 

1 cup frozen orange juice concentrate
1/3 cup apple sauce
1/3 cup brown sugar
1 cup wheat bran
1 1/3 cup whole wheat flour
4 tsp baking powder
1 cup cranberries, fresh or frozen
1/2 cup pecans, chopped


1. Oil or line 12 muffin cups - 8 if larger muffins

2. Combine juice concentrate with oil and brown sugar

3. Stir in wheat bran and allow to sit for 5 minutes

4. Add flour and baking powder at once and stir quickly until all
ingredients are moist

5. Do NOT over stir or beat

6. Fold in cranberries an pecans

7. Pour into muffin cups and bake

8. Bake 25 - 35 minutes depending on size @ 400 degrees
