Very Veggie Breakfast

Ingredients: 

4 tablespoons of olive oil
1 head of broccoli - cut bite sized
1 bunch of asparagus - cut bite sized
1 red bell pepper - diced
1/2 onion - diced
6 button mushrooms - sliced
1 bok choy - dice the bottom and save leafy green
4 handfuls of spinach
half an inch of fresh ginger - minced
8 small potatoes - cut
