For the Steak:
1 1/4 lb. ground chuck
1/4 c. minced fresh parsley
2 T. minced scallions
1 t. kosher salt
1/2 t. black pepper
2 T. all-purpose flour
For the Sauce:
1 T. olive oil
2 c. sliced onions
1 t. sugar
1 T. minced garlic
1 T. tomato paste
2 c. low-sodium beef broth
1/4 c. dry red wine
3/4 t. kosher salt
1/2 t. dried thyme
