Spinach, Tomato, Mushrooms & Olives

Ingredients: 

INGREDIENTS:

1/2-1lb of fresh baby spinach

1 large red onion

1/2-1lb of baby bella mushrooms

2-4 cloves of garlic

1/3 cup pitted kalamata olives

1/2-1 cup fresh tomatoes

Spice to taste with dried oregano, black pepper, dried basil, salt

Olive oil


 

 

Chop all the ingredients, toss in a saute pan with the olive oil and cook gently.  Always put firmest ingredients in pan first: start with onions, add mushrooms, then spinach and garlic.  Add the spices keeping water from cooking the spinach. Add tomatoes and olives last as they do not need cooking. Toss with your favorite cooked pasta, rice, or quinoa.
