Southwest Eggrolls with Avocado Creme Dip

Ingredients: 

1/8 cup lime juice
1/4 cup chopped fresh cilantro
1/8 cup olive oil
2 chipotle chiles, roughly chopped, plus 2 + 1/2 teaspoons adobo sauce (I had a puree of chipotle chilies and just did 1 tablespoon)
1 tablespoon honey
3 medium garlic cloves, minced
1/4 cup chopped scallions (or red onion)
1 teaspoons ground cumin
Salt and pepper
2 boneless, skinless chicken breasts, diced
1/2 (8-ounce) can black beans, drained and rinsed
1/2 cup corn
1/4 cup roasted red pepper, sliced thin
1/2 cup chopped spinach
1/2 ripe avocado
3 Tbs sour cream
8 eggroll wrappers
Lime wedges for serving
