Curried Cauliflower and Sweet Potato Stew

Notes: 

5 key non-staple ingredients: 1 large onion, 4 c vegetable broth, 1 lb sweet potatoes (about 1 large), 1 large head cauliflower, 1 15-oz can chickpeas (or 1 1/2 c cooked chickpeas)

Omited: 1 small chile pepper, such as jalapeƱo or serrano, seeded and minced; 1 tablespoon natural peanut butter

Ingredients: 

1 large onion, peeled and chopped
1/2 t ground cumin
1 T minced ginger root (or 1/2 t ground ginger)
3 cloves garlic, minced
4 c vegetable broth
1 lb sweet potatoes (about 1 large), peeled and cut into 3/4-inch cubes
1 T curry powder
1/8 t cinnamon
1 large head cauliflower, separated into bite-sized flowerets
1 15-oz can chickpeas, rinsed and drained (or 1 1/2 c cooked chickpeas)
1 15-oz can diced tomatoes
2-4 cups water
1 t salt (or to taste)
1/4 t cayenne pepper (or to taste)
