1 cup quinoa (preferably soaked overnight, or rinsed really well)
2 cups filtered water
1 small-medium sized butternut squash, peeled, seeded, and cut into 1-inch cubes
2 Tbs. melted coconut oil
4 large leaves of curly kale, torn into bite-sized pieces using your hands
⅓ cup pomegranate seeds*
1 small fennel bulb, thinly sliced
1 orange, juiced
½ tsp. grated orange zest
2 Tbs. olive oil
15-20 drops liquid stevia (depending upon how sweet you want it)
sea salt, to taste
