Italian Sausages, Potatoes, and Artichoke Hearts in Tomato Broth

Notes: 

I used only two sausages cut into rounds and substituted 1 cubed microwaved eggplant for potatoes. I also used 2 cups of crushed tomatoes (or marinara sauce) 1 Tbsp balsamic vinegar, 1 tsp Italian seasoning, 2 Tbsp sun dried tomatoes in oil, one 12oz package frozen artichoke hearts, one 8 oz package of spinach, and two 8 oz packages of sliced mushrooms for more umami flavor.
