Chile Verde Con Cerdo Green Chili With Pork) Recipe

Notes: 

I cubed pork loin, dredged it in spices and flour mixture, browned it in bacon grease, added garlic and onion when browning. I added some frozen tomatillo sauce instead of fresh tomatillos.. I would use less spices in the flour next time. Reduce by 1/2. It was easy and delicious.

Ingredients: 

2 - 3 lbs pork roast (pre-diced pork works well for a faster preparation. Just brown with onions)
2 tablespoons cooking oil or 2 tablespoons lard or 2 tablespoons bacon grease
1 large chopped onion
1 head minced garlic
6 Tablespoons Flour
15 oz. can of tomatoes
2 cups diced green chilis
3 large tomatillos
1 minced jalapeno
5 cups broth or water
2 Tablespoons each of ground cumin and chili powder
salt about 1 teaspoon
