I cut the carrots into matchsticks and added them, as well as some chopped broccoli, to the mix with the peppers. I only used 2 tablespoons of chili garlic sauce in the Gochyjang sauce, and then I only used about 3/4 of in the vegetable mix. More than enough heat for us.
