1 1/4 cups quick cooking oats
2 tbsp white sugar
1 1/2 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
1 3/4 cups buttermilk
2 tsp vanilla
1/4 cup vegetable oil
3 eggs
1/3 cup sour cream
Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a blender or food processor until smooth
Heat a lightly oiled griddle or frying pan over medium high heat
Pour or scoop batter onto the griddle, using approximately 1/4 cup for each pancake
When you see a lot of tiny holes on the surface of the pancake, flip it over
Serve hot
Very good with Lemon Banana Sace and Peachy Applesauce
