Any Veggie Coconut Curry

Ingredients: 

1 cup dry brown rice
1 cup lite coconut milk, or 1 cup non-dairy milk + 1 teaspoon coconut extract
1 cup fresh or frozen green peas
1 15-ounce can garbanzo beans, drained and rinsed, or 1 1/2 cups cooked garbanzo beans
8 mushrooms, sliced
2 cups chopped broccoli florets, or 1 10-ounce package frozen chopped broccoli florets
3 cups chopped kale
1 medium potato (peeling optional)
1 pinch cayenne pepper
1/2 teaspoon turmeric
1 teaspoon ground cumin
1 1/2 tablespoons curry powder
1/4 cup vegetable broth or water
3 large carrots, cut into rounds or chopped
4 garlic cloves, minced or pressed (about 4 teaspoons)
1 large onion, chopped
2 cups water
3 tablespoons reduced-sodium soy sauce
