For the fruit filling:
250 ml (1 cup) water
1 teaspoon vanilla essence
1 teaspoon ground cinnamon, or 1 cinnamon stick
1/2 teaspoon ground nutmeg
120g (2/3 cup) brown sugar, lightly packed
800g of your favourite fruit (apples, pears, plums, apricots), cored or stoned, and diced
For the topping:
80g butter
120g plain flour
40g rolled oats
100g brown sugar
80g nuts (I use macadamias and pecans), coarsely chopped
1 teaspoon ground cinnamon
1 teaspoon baking powder
Ice-cream, to serve
