1 cup caster sugar
1 cup cold cooked rice
1 1/2 cup water (i used 1 cup only)
1/2 tsp instant yis (mauripan)
shredded young coconut and a pinch of salt
Method of cooking :
Blend rice with water until it becomes smooth
Add in the sugar and blend some more
In another bowl, mix the flours and the yeast
Then pour in the wet ingredients and mix until everything is dissolved
Leave to ferment for a few hours (minimum of 2 hours and max up to 5 hours, any longer, your batter will be very sour)
Pour into moulds and steam for 15 minutes
Serve with steamed shredded coconut mixed with a pinch of salt
