Apple & Coconut Cake

Ingredients: 

150g sugar
150g flour
1 tsn vanilla
150 butter - melted
3 eggs
100g coconut
1 apple grated and peeled
t tbsn b powder
2tpsn coconut threads
Apple fillibng
200ml cream, 55g iciing sugar , 3 appples 30g butter

  1. Oven 160 fanbake, grease 23cm tin
  2. place sugar and vanilla ina bowl, add melted butter, Mix well
  3. whisk in egs one at a time
  4. Add aplle, add baking powder and flour and mix well
  5. Pour mixture into tin and spinkle with threads
  6. Bake 40 minutes
  7. Take out cut into two layers and cool.
  8. Whip cream and icing sugar
  9. Peel apples cut into small peices, Fy in butter 10-15 minutes, cool, carefully fold in to cream.
  10. Cover middle with apple cream
